Slow Cooking Sunday

Okay, I finally feel like I've got my footing back and that the whirlwind of a New Year has slowed down and we can get back to "normal" life. AND I may be biting off more than I can chew BUT I am wanting to start a meme on my blog called Slow Cooking Sunday. Here is how it will work, each Sunday I will post a picture and the recipe of how I cooked something slow for us to eat after church. It could either be in a slow cooker or in the oven but something that is ready for us when we walk into our home!!!! Now this meme will be open all week long ending on Saturday and I would love for you to link up a post with a slow cooking recipe. All I ask is that you either attach the button or link back to the current week's post. Simple and a great way to revisist those old posts that your readers might not have had a chance to read, you know way back when your blog was new and all, kinda like mine, lol!!!!! Alright lets get too it!!!!

This week I cooked Meat Ball Stew for my family, yummy!!!!


Now you can go to BusyCooks.com to get the original recipe but here is how I did it:
I chopped up two large carrots, three medium size red potatoes and 1 1/2 onions and put them in my slow cooker. (I already had a 2lb bag of carrots on hand so I wasn't going to buy a bag of baby carrots.)
Next I added enough water to account for the 3-14ozs of beef broth plus 1 cup of water that the recipe called for; covered and let it sit over night. This meant no chopping in them morning and a clean kitchen)
In the morning I added the following to the slow cooker:
  • 5T of beef boullion
  • 1/2 of a 24 oz bag of frozen meatballs
  • 1 hand full of frozen lima beans
  • 3 hand fulls of frozen corn
  • 6 oz tomato paste
  • 2 14oz diced tomatoes, undrained
  • 1 spoon full of minced garlic and sugar
  • added but did not measure the basil, salt and pepper.
I slowly stirred all the ingredients to mix well and turned my slow cooker to low, that was around 730ish and we are usually home from church between 1230-1pm!!!
(What I have found is that this particular slow cooker seems to get hotter than my older slow cookers and would probably be considered high on most today!)

I also baked a loaf of bread in my bread machine.
(Thankfully I remembered to take a picture before the loaf was all gone!)
