This week I cooked Meat Ball Stew for my family, yummy!!!!
Now you can go to BusyCooks.com to get the original recipe but here is how I did it:
I chopped up two large carrots, three medium size red potatoes and 1 1/2 onions and put them in my slow cooker. (I already had a 2lb bag of carrots on hand so I wasn't going to buy a bag of baby carrots.)
Next I added enough water to account for the 3-14ozs of beef broth plus 1 cup of water that the recipe called for; covered and let it sit over night. This meant no chopping in them morning and a clean kitchen)
In the morning I added the following to the slow cooker:
- 5T of beef boullion
- 1/2 of a 24 oz bag of frozen meatballs
- 1 hand full of frozen lima beans
- 3 hand fulls of frozen corn
- 6 oz tomato paste
- 2 14oz diced tomatoes, undrained
- 1 spoon full of minced garlic and sugar
- added but did not measure the basil, salt and pepper.
(What I have found is that this particular slow cooker seems to get hotter than my older slow cookers and would probably be considered high on most today!)
I also baked a loaf of bread in my bread machine.
(Thankfully I remembered to take a picture before the loaf was all gone!)
