Cookies & Moving Vans

As I type I have some yummy Breakfast Cookies in the oven and Big Daddy is at the Housing Office working on getting our move dates scheduled. We are moving from the multiplexes to the towers. Not what we wanted but as long as we can lay our heads down in the same house, I feel greatly blessed!!!!

This morning I decided to fix one of Big Daddy's favorite morning meals, Breakfast Cookies so here is the recipe and if you try them out please leave a comment on how you liked them!!

Breakfast Cookies
1/2 cup butter, softened
3/4-1 cup peanut butter
1 1/3 cups packed brown sugar
2 teaspoons vanilla extract
1-2 eggs
1/3 cup water
1 cup all-purpose flour
1 cup whole wheat flour
2 cups quick cooking oats
1/2 cup wheat germ
1 teaspoon salt
1 teaspoon ground cinnamon
2 teaspoons baking soda
* optional 1 cup of raisins or chocolate chips

-In large bowl with an electric mixer beat together butter, peanut butter, brown sugar and vanilla until creamy. Beat in eggs and water.
-In separate bowl mix together flours, oats, wheat germ, salt, cinnamon, and baking soda. Mix into peanut butter mixture with electric mixer. Stir in raisins or chocolate chips.
-Either drop by spoonful onto a greased cookie sheet or spread 3/4 of mixture into a medium bar pan, we then cook rest of dough as cookies for kids. Bake at 350 for 18 minutes for cookie sheet and 20 minutes for bar pans.
-Store extra, if there are any, in an airtight container!
